Relish Recipes

Ingredients for Melon Relish Recipe
1 tb Olive oil
2 tb Shallots; minced
1/2 c Honeydew melon; small dice
1/2 c Cantaloupe; small dice
1/4 c White wine
2 ts Chiffonade of mint
Salt and pepper
5 Pieces fried arugula
Black pepper
2 tb Parsley; chopped

Melon Relish Preparation..In saute pan, heat the olive oil. When the oil is hot, saute shallots for 1 minute. Add the melon and cantaloupe and saute for 1 minute. Add the white wine and continue sauteing for 2 minutes. Temove from heat and season with salt and pepper. Stir in mint. Chill for 1 hour. Pile the relish in the center of the plate. Arrange the scallops around the relish. Garnish with fried arugula, black pepper and parsley. Ingredients for Kraut Relish Recipe
16 oz Sauerkraut, drained
1/2 c Celery -finely chopped
1/2 c Green pepper -finely chopped
1/2 c Carrot -finely chopp
1/2 c Onion -finely choppe
1/4 c Sugar

Ingredients for Lime-Orange Salsa Recipe
4 Navel oranges, peeled and
White pith removed
1 sm Red onion, finely chopped
1 c Fresh lime juice
1 c Chopped fresh cilantro
1 tb Minced chipotle peppers
1 Glove garlic, minced
Salt & Pepper to taste

Lime-Orange Salsa Preparation...Working over a medium bowl to catch the juice, cut the orange segments from the surrounding membrane, letting the segments fall into the bowl. Add onions, lime juice, cilantro, chipotle peppers, and garlic. Stir to combine; season to taste w/S&P. (Can be prepared ahead and stored, covered, in the frig for up to 8 hours.)
